Grilled peach and goat cheese burgers with spinach and garlic aioli, served with a side of fries.
Portland has so many great burger places but there is something energizing about making a meal yourself, sitting across from your husband in your own dining room, watching him enjoy every bite of a creation you made. I am telling you, these burgers are simple to make and will wow your guests. Fancy burgers without the snobby café? Yes please!
Ingredients for 2 burgers
•Buns- I like thinner buns that don’t take away from all of the wonderful flavors
•1/2 lb of hamburger (or more depending on how much meat you want.)
•1 ripe peach, halved and pitted
•1 tsp brown sugar
•2 T minced garlic
•Sea salt and pepper
I like to mix in minced garlic, salt and pepper into the hamburger meat before forming patties. Or go buy the ready made burgers from whole foods.
Key: Don’t over do them! Dry burgers are nasty and not worth the calories!!!! Take them off the grill before they are completely cooked, top with goat cheese, then wrap them in a foil tent to finish cooking and melt the cheese.
While grilling the burgers also grill the peaches! Massage coconut oil over them first, then flip and rotate them while you flip and rotate the burgers.
Once the peaches are done sprinkle a little brown sugar on top and they are fabulous.
Toast the bottom half of the bun so it won’t get soggy.
Now put the garlic aioli sauce on the bun, then burger with goat cheese, grilled peach, spinach and top bun.
You have yourself a fancy little burger!
Garlic aioli sauce
Mix together 1/4 cup mayonnaise (I love the organic mayo from whole foods), 1T minced garlic, juice from half of a lime, along with salt and pepper to taste.
